Pizza is everywhere these days, I can’t scroll through Instagram without seeing a cheesy slice. I love pizza as much as the next person, but I’m also trying to stay fit and eat healthy. This makes it tricky to stay away from all the deliciously yummy but not so healthy food. In my quest to find new dinner options, I came across a recipe from the blog The Weary Chef for a delicious and healthy pizza alternative. She called them Quinoa Meatball Pizza Cups.
These little pockets were super fast and easy to make. I paired these with a salad and it was the perfect dinner. My oven got a bit hot and so they came out a bit toasty, but I will take them out sooner next time. I also used a mixture of cheddar and mozzarella cheese making the top look darker.
As for the taste – I loved them! The baked quinoa acted like a crust and tasted just like a pizza! As a personal preference, I would add a bit more sauce as well as some chilli flakes next time. I like my food with a spicy kick!
Even though my blog is predominately about beauty, my ultimate goal is for it to be a lifestyle blog. Majority of my posts will still be about makeup and beauty, however I am going to incorporate some other content to mix it up. Let me know what you think!
